It is true, we love treats over at our house. We normally keep them to the weekend but we have been known to bust through a pile of cookies during the week too. It’s All in the Balance right?

I found this super intriguing recipe from someone I follow on Instagram. Her name is Rachel and her company is called Rachel’s Good Eat’s. I love her style of eating and all of her recipes are spot on for our tastes. Make sure you check her out.

As always I changed the recipe up a bit. I did not change this one a lot but just added some personal touches to please our unique taste buds. Yes, I added chocolate because Mike is a chocoholic.


1/2 cup peanut butter or almond butter.
1/4 cup 100% maple syrup
1 tsp vanilla extract or almond extract
2/3 cup almond flour
1/2 tsp baking powder
1/4 cup dark chocolate chips


First off, set your oven to 350. Line a cookie pan with parchment paper and set it aside. Place your peanut or almond butter into a large mixing bowl. You can use an electric mixer or even do this by hand.  Next, add in your maple syrup,  (please only use 100% maple syrup, none of the fake stuff) and your vanilla or almond extract to the bowl.

Once everything is mixed together, fold in your almond flour and baking powder. Do not use almond meal. I love the almond flour from Costco. Now, get ready here comes the fun part. Dig into the batter and make small truffle-like size balls. You want to roll them between your hands till you get a smooth texture. This is so therapeutic to me for some odd reason. Since these are going to be a sandwich you want to try and get the sizes to be the same, important but not crazy crucial. Place the small balls on your parchment paper lined pan.

With a fork gently press down on the cookie and make criss-cross marks across the batter. You can get an idea of what this looks like from the picture below. If the batter sticks on the fork just dip it into some gluten-free flour.

Bake the cookies for 12 minutes. These are not going to super crunchy cookies but more sink your teeth into them cookies.  Once they are done put them aside and take half of them and place them on a plate, let the other half COMPLETELY cool on the counter.

Take the ones that are on the plate and divide them and make sandwiches with them. This means to place one atop of the other 🙂 Now take some of those chocolate chips and place them between the two cookies making a sandwich. Make sure you have the smooth sides together so you can see the pretty criss crosses. The cookies should be warm enough for the chocolate to melt. Do not fuss with them, just let the chocolate melt on its own.

Lastly,  grab a mixer or small blender and place 1/3 cup peanut or almond butter and 4 tsp of maple syrup into it. Blend it till it is super smooth. Once smooth take those cooled cookies and make sandwiches by stuffing this nutter butter goodness between the two cookies.
